Does deleting a task remove the meta tags?
No. Delete task only removes the task from your History list. The meta titles and descriptions already saved stay on your products.

No. Delete task removes the task from History, but the meta tags it wrote stay in Shopify, and credits already used are not returned.
If you want different tags, run a new task with new settings. To stop a task that is still running, use Cancel task instead.
